I love stumbling upon places that make me feel nostalgic about my travels. By far, my travels to Italy has time and time again proven to be #1 with regard to food in my opinion. The flavors, fresh ingredients, & careful preparation are all intertwined to exude a true taste that unlike any other combination. I had the absolute pleasure of visiting Vero Italian near Biscayne BLVD, Downtown Miami. The owners, Paolo & Paola, are dedicated to keeping the true taste of Italian flavours in their unique setting. Below is their exclusive interview.
“Our mission is to educate our customers to the true Italian flavors which are really a vast world. Italy in fact, has a variety of food culture, for example, you would have to travel for 200 miles through our beautiful peninsula to find over 50 different kind of Italian cheeses (non-vegan) ; with over 450 native being from our land!
Countless type of wines, the biggest variety in the of all, biggest than all the rest of the world together. This obviously does not make things easy so in any good Italian culinary school you would be instructed of the crucial important relationship between the product and the territory. Very little industrial process and mass distribution involved, we are a big fan of the “0 miles” product sourcing that means you will choose anything that is in the 0 mile range to offer in your establishment, as the regional food are crucial to the culture preservation and the local economy survival.
Clearly this keeps things TRUE. This give us the opportunity to continuously change our specials and menu options. At first was a very difficult task, but during the last few years the importers and distributors of prime and specific Italin food products have exponentially increased volume due to the relatively small distance between South Florida and Italy, in comparison to central US or the East Coast.
The choice of Hospitality as professional career can be a tricky thing, often can be defined in two very different ways: some only focus on the economical reward and some are obsessed with their job similar to an artists’ ethic. We have been working in this industry since pretty much forever and experienced all forms of different realities. All the acquaintances along the way have forged our way to conduct our business.
It’s very difficult to share work and life with the same person but it can be an amazing way to continuously improve your business and a challenging way to see how you both relate to it; As a couple, running two different parts of the business can bring numerous conflict but at the same time is an incredibly constructive experience.
As per our staff members, we are always choosing personalities that are passionate about the job honest to us whatever and happened we stand behind them, we also really believe in empowering our employees to do the best in developing new ways to solve the conflicts that restaurant faces daily.
Most of all we always instruct our FOH member that the sale is not important as much as the costumer experience, by keeping in mind to treat others the same way we would be treated. For all of the above reasons, the alchemy that has driven Vero to a successful business is very hard to replicate without the personal touch of both chef and manager, therefore branching out will be possible only with the very right individual as equal partners, because the obligation they must feel in succeeding in the better way to hospitality.
Miami is truly a paradise. Who would not like to live here? At the age of 32 having achieved great results and second college degree in Sydney I found myself if front of a new challenge: starting again from scratch. That was exciting, as per in Australia the main foreign influence is Asian with all the beautiful food fusion possibilities. I had the chance to delve into the great cultural food of South America, a completely new universe that had deep roots in street food and local ingredients, the bases of my formation.
I also got to learn a new language which is also useful, but to create our Venue I have decided not to be influenced from any of it, Vero is a True Italian restaurant and we strongly stick to our original flavors as is so very important to give the possibility to taste something original and genuine, without the influence of any others. As I stated before, Italian food variety is so vast that it would take a really long time to run out of options!” – Paolo & Paola of Vero Italian.
